The founder, David Ibarboure, together with Hong Kong's culinary director and head chef, Walter Lok, perpetuate the gastronomic spirit of the renowned Ibarboure family. Their modern and innovative dishes draw inspiration from the regional repertoire, proudly working with fresh and seasonal products.
Walter Lok is a highly skilled French chef who worked in many recognised restaurants, such as Le Gouter Bernardaud in Central's IFC, St. George and La Marmite. With a team of experienced staff, BriKetenia will bring you the best local flavours of the picturesque Basque region.
